Hi Steve,
If you just want to change the colour of an individual sketch, then right click on the closed (not in edit mode) sketch and it will bring up the property manager box below which will allow you to pick which colour you would like the sketch to appear in.......
If, however, you want to make it so that ALL of your sketches appear with your one preferred colour then you could try going to TOOLS>OPTIONS>SYSTEM OPTIONS and try playing with the settings I have highlighted below. Please ensure that you have a latest backup copy of your settings before playing around though.........
Whilst I have done the first method easily and with much success I have never tried the second method so this is only a assumption that it should work for you. It also works on the theory too that if, for example, you wanted ALL of your sketches to appear in bright green then essentially all you would need to change would be the item listed 'Sketch, Fully Defined' and as long as you indeed fully define every one of your sketches then ALL of them should appear in bright green!
Of course, you may want to show 'Construction Geometry' as well which is listed a little further down the list and so you would need to edit this one also, and so on, and so on. You may even want to use multiple colours?
