I have a toolmaker who will be spending 1 hour per day with me to Learn SolidWorks.
He has zero CAD or CAM experience. Never touched it.
He has limited computer/Windows experience, he just uses his phone for everything.
He is a brilliant toolmaker.
The boss has agreed to send him to the Essentials class at our VAR. However, He needs to get some time actually using SW before attending class.
He is running thru the Tutorial included with SW2018. I am not fond of this because the way the tutorial works is very different to the workflow I use. (I get it is a teaching tool and needs to show the slow menu heavy way. (I also get it's valuable to learn all of the various ways to accomplish a given task in SW))
What would you recommend in this situation?
Best beginner YouTube? (Yes I can Google it but which of the "About 520,000 results" would you recommend?)

If I was in your situation, I would contact the local tech college to see what they were using for their introductory training book. These usually cover in order basic operations, making parts and then making assemblies. These text books usually are fairly inexpensive and you can find them used for a reasonable fee.
As far as youtube videos i have no clue on who is a good resource and who is not.
Since you stated he has limited experience on a computer I would definitely create a document of some sort explaining your server/computer structure that he can have with him to know where to store what and how your folder structure is set up.(I keep several copies of this in my desk just for a backup if I start seeing errant files in our network)
Lastly as a toolmaker I would encourage his design to utilize the same approach he uses to machine parts.
Parts are rough stock and each feature is a removal of material, this way he doesn't get in the habit of adding material to parts as the design goes awry.
This is just a personal thing, I hate opening a model of a rectangle part that has 3-4 boss extrusions on it because the designer just kept adding material to a simple block to get the shape or profile they wanted.
