In the training manual for SWE Schematic it says that you can split a connector so that you can use it in different areas of the drawing or different schemes, but there's no example on how to do that. Can anyone elaborate?

Carl, later on in that chapter it goes through various ways to split or continue inserting pins from a previously added connector. Basic process is:
Choose Schematic>Connector and choose to either create a new connector or continuing inserting a previously added one (use it's available pins, in other words split it up!)
If it's your first connector or you're creating a new one, Pick your part from your library, specify component # etc
Now you can choose a configuration (shell, individual pins with no shell etc), and click on the boxes to indicate which pins to add. You can press the up/down arrows to reorder. Click on your sheet to insert what you've chosen.
It will keep that connector insertion alive and allow you to keep inserting pins from that connector. If you need to keep inserting on another page or later, just choose Insert connector again from the Schematic tab and click either "select existing" to go to your component tree and choose any of the connectors in your project, or previously inserted connector to use remaining pins from the most recently added one.
