I am trying to create the exact same filet on the other side of the part. I tried doing a whole other VarFillet and also mirroring it and I always get an error even the full preview shows the fillet perfectly. The part is symmetric. What could be causing the error?
I would investigate some more fillet types such as Full Round Fillet and Face Fillet with one or two hold lines.
Anyway try to upload your part (use advanced editor) so we can have a go at it.
Here is the part saved in SW 2016, please give it a try if you can. I would like VarFillet1, with the smooth transition from 1.5 to 1mm, to match VarFillet2.

Mirroring fillets can be difficult; it may be worth going about designing one half of the body, and then mirroring this instead as a strategy
Considering your part is symmetrical I would use Iain's suggestion.
I just used a cut extrude a portion of the model and then mirrored the body, however, if you would like a cleaner design tree you could model one half of whole part and then mirror the entire part. Just make sure you roll back your design tree to a time before the extrude cut numbers.

So I was able to get the fillet working on the other side of the part but with a slight difference, notice the difference in the transition from 1.5 to 1mm. What do I need to do to have the same transition as on the other side? I would like to have the smoother transition.
