How to flatten this part?
I have tried different options - changing bending allowance, sketches, selecting different edges for flat-pattern.... none of them worked.
Basically sheet-metal is uniform thickness and single curvature.
I know Swept Flange and Lofted Bend can do something more but still I dont think you will be able to unfold with those small grooves.
Besides that your geometry is self-intersecting to further complicate things.
If you only need the flat-pattern to define the cut, try to use a Base Flange from Sketch1. That will flatten and create a cut for your sheet metal.
It a future version, can't open it.

SolidWorks can't flatten overlapping sheet metal but probably there is some workaround

What is the reason of having 0.10 mm gap.
In my experience when flattening the cylinder a gap is necessary to make successful flatten. I can be 0.1 or 0.001, doesn't matter actually. Obviously, in this case, is not the same. I just start with a cylinder and after that tried to overlap it.
I assume that in order to have a successful flatten continuity should NOT be there, therefore to break the continuity gap is introduced.
hi - that is the way i have always done it - though there probably is a much simpler way of doing it ( i just don't know it )

Lucas,, I'm thinking you probably noticed this, but if you change your .80mm dim to 1.50mm this does flatten. Any difference in the developed flat pattern would be extremely small. I made two configurations of this. One keeps that dim at .8, perhaps for a better visual? and the other at 1.5 in order to flatten.

However now I'd like to make a hole cut in this cylinder and I can't. Solidworks doesn't allow me to make a cut in this shape. Try in your model if you can make a hole on side. Thanks in advance.
Are thinking of an alignment type of cut?.. Or just a hole thru the side? If you don't use "normal" in your cut it does cut and translate to the flat pattern.

to get it to unfold - I added a boss-extrude (0.01mm) and selected this as a fixed face
