I don't know if this has been asked yet, but how does one create a broken out section in Solidworks Composer? I have tried different ways with cutting planes, but nothing works like solidworks does with a polyline type cut. Any help would be great.

I used planes to create a cut-out section. However, I was wanting a spline type broken section and this seems to be more difficult or not even possible yet. The plane cuts are okay, just not as aesthetically pleasing.
As Derek already mentioned, there is no way in Composer to create a cutting plane like in Solidworks. Only up to three planes can be used to create a cut section.
If you want to create a spline, this is not usable for the cutting plane direct.
You will be able to create a spline, using Polyline or 2D Vector Image and place this actor in front of your view, as an overlay of the Scene.
What I have done in the past if I want a creative cut is do it in Solidworks. You would do your cut in Solidworks and save that as a separate part or assembly and then merge it into your existing Composer file then use it to create your view or fade it in and out to show cuts in an animation. To me the digger is not a good option.
Cheers,
Derek
Have you tried the Digger tool in Composer? It can peel back layers or x-ray. Take a look at it is you have not already.
The only way to do cuts in Composer is using planes. Can you post a screenshot of the outcome you would like? Would make it easier for us to tell you a workaround or solution.
