I believe this simply updates the text. If you type something new in there and then click insert property it will update the text box.

this function is a possibility to select meta-prpertys from the touched part.
create a lable, Change Text/Text to String and then open Text string by clicking on ... (at the right side)
click on insert property and then look to the property-menu. This shows the prerties from the Part now! scroll down to see all the meta-propertys like partnr.
click on one of the meta-Infos and this neutral info will be shown in the box:
in the viewport you will see the real info like "SXR-34567"
