I would like to cut a cross section and use that to sketch the profile of the part to create a new part
Maybe I misunderstood, I thought you wanted to replicate the profile. You can show the end view and do this. If I misunderstood please correct me. I am aware that if a radius or chamfer is cut on one end you will only get the main portion of the profile, the chamfered edge would have to be selected as well. Though if you use that method the extrude will likely show that as a line that actually doesn't exist. I have 'trimmed or extended' the selected lines to accomplish this.
Travis, look into using an "Intersection Curve". I think that's just what your looking for.
Create a plane (or use an existing one if applicable) where you would like to sketch/cross section. Then on said sketch use the "Intersection Curve" feature within the sketch tols to create your profiles from existing geometry.

I would just show the end view, start a sketch and use Convert Entities.
The only with that is that a cross -section is only a graphical representation of a cut and does not allow you to select the "fresh" faces. I would suggest using the split body command and using the planes as the cutting tool, in order to use the new body as a seperate part by saving it as an individual part from the bodies list. Does that make sense?
the ends of the part are different than the cross section that's why I want to use it

how I normally do it make a drawing sketch the outline and start a new drawing and use that to create my part. But I wish there was a way to use the cross section to do this.
A little more detail...
Start a sketch on a plane that defines your cross section
Use "intersection curve" to get section curves. Found under Tools --> Sketch Tools, Intersection Curve
You can select faces individually, or you can select the entire body (best accomplished picking from feature tree).
I usually make a sketch of just the cross section, and then a second sketch (or more) that build off the cross-section sketch.
