A couple things , I am also running SOLIDWORKS 2017 SP1 and am not having this issue it is actually working perfectly, I would try a couple things on this:
- make sure your graphics drivers are on the latest approved SOLIDWORKS Drivers : Graphics Card Drivers | Hardware & System Requirements | SOLIDWORKS
- if that doesnt work try backing up your registry and resetting it to a fresh registry, you can get corrupt entries in your registry from time to time and this may alleviate the problem : http://www.javelin-tech.com/blog/2011/09/resetting-solidworks-windows-registry/
also generally you can apply an appearance to an entire assembly by simply dragging the appearance and dropping it into the white space of your model area, does this still work for you?
