I am a student, taking my first steps with this amazing software.
I am working on a project involving a model meant to replace the regular wine cork.
In order to check if my model is efficient, I would like to analyze the model for pressure over time.
How should I simulate the pressure on the part of the cork which goes inside the bottle?
Furthermore, the cork should be made of a material that doesn't have data about its yield strength (PE low density). Should that be a problem?

You might try a displacement boundary/condition on the proposed surface in the model - probably something very small.
If you expect much deflection then this could easily turn into a non-linear problem. You should probably also consider the friction coefficient of the glass to your 'cork' especially if you are expecting internal pressure.
