Why is it that I can define the covering, and it displays while I am editing the route, but it disappears as soon as I exit the edit? It is most frustrating as I am trying to display the insulation on a piping system to make sure there is sufficient room for everything. I have seen some unhelpful advice to check the "add to drawings" option on the coverings property manager, but that is not an available option to select.

I've never used coverings on tubing, then again, I don't use tubing that much.
I do know that coverings on piping is a hit and miss affair or at least very finicky. On top of that it doesn't cover elbows or T's or other fittings.
Which means that in general it's pretty useless to check for possible conflict points when working in small clearance spaces.
If you definitely positively need to have it then I would suggest to bite the bullet and create 3dsketch lines for instance by insert part in route asm, copy the route 3dsketch into the part, position it so as to lay over the route and add a sweep. If you mate the 3dsketch in the part with the one of the route then it should even be dynamic enough to deal with small changes.
