Hi Joel,
We created forms for our knockouts. Create a part that represents
the knockout and then go to "Insert/Sheet metal/forming tool". This
then allows you to select the stopping face (the back of the part)
and cutting face (not used for a knockout).
Store this in a specific folder and add it to your library side bar
making sure you have forming tools checked off in the features of
the folder.
