you can use the getting started which is available after launching Composer.
And make use of Youtube. there are many useful materials about Composer.
This site is a good start TodCast . Also just google 3DVIA Composer tutorials (it was called this before being bought by Dassault). As with anything YouTube is always a good go to as well. Aside from this the only manual they have is given to you during the training class. I would recommend you use the software for a month or so while making notes on issues you cant solve. Then take the class and ask all of the questions along with learning what they instruct. If you plan to do a lot of animations you should definitely take the month and practice before doing the class. Animation is a small portion of the instruction (least it was when I was trained) so you will want to ask specific questions. There are a lot of good users on this forum so search around and ask questions on whatever you can't find.
