A while ago at an User Group meeting I saw the presenter turn off the little expand chevron on the right click menu. Is this option available in 2014?

I don't believe you can turn that off; what that signifies is that there are more menu options that are hidden. So, you could click the "customize menu" option after expanding the menu and turn on all of the checkboxes in the menu and then the chevron will go away. Basically, using customize menu is a way of removing extraneous items from a menu that you don't or seldom use; otherwise, nowadays, these menus are getting long.
Anna's reply to Adams original question is not working for me in SW2018.
The specific case I'm concerned with is the RMB menu which comes up when working in a sketch.
There are default options I never use (like "Display Grid") which are always on display, whereas "Sketch Tools" (which I use for things like "Split Entities") is usually collapsed and requires the chevron to be clicked, and then another couple of clicks to open Sketch tools and pick the command I want
It's a short RMB menu, I don't want it collapsed at all, and I would like to be able to remove items I never use.
I don't know of a way of doing either of these things currently.

I had failed to remember that the "Customise" option, in a context-specific form, is shown at the bottom of the RMB menu ....
but only once you've expanded it (unless someone knows how to force it to never contract in the first place, which was the OT - I'm sure I recall that Anna's reply used to work for the Sketch RMB menu)
OK: I worked it out: it's just misleadingly named: I was using the lower option (Menu Customisation).
The UPPER option in Anna's screengrab should be called something like "RMB Shortcut Menus", not "Shortcuts", and it DOES still work for RMB menus - but it's incompatible with wanting to dictate that certain options are NEVER shown.
I had wrongly assumed that "Shortcuts Customisation" turned on visibility of the shortcut hints you get from hovering over an icon, or some such.
In case anyone isn't au fait with this, here's what the entire sequence looks like (at least, on my installation):

Unless you check all boxes, the chevrons will always display as in the first grab regardless of your choice under "Shortcut customisation", but this is for the (somewhat valid) reason that you can access the unchecked commands by expanding. What you have achieved is to specify what the collapsed list contains.
Choosing "Show All" will DEFEAT the selection you made (eg per the third grab).
