Same question here. We just upgraded Office corporate wide, and so far it seems to work, but based on the link Alice Caspari shared, I'm wondering if there is a reason Office 2016 products are not yet officially listed. I can't seem to find any official word from SOLIDWORKS on Office 2016 compatibility (or lack thereof). See related post: Re: Office 2016 support?
The link I shared is the official recommended software requirements SolidWorks. I think a lot of testing goes into officially approving compatibility. My company once upgraded office too early and it ended up corrupting any design table that was opened, so I always recommend going with the recommended releases.
As an FYI Office 2010 was approved in SW 2010 SP5 and Office 2013 was approved in SW 2013 SP4 : SOLIDWORKS System Requirements | Windows and Mac | SOLIDWORKS

Given that we do not want to risk Design Table corruption or other serious issues, and aside from uninstalling Office 2016 completely, I wonder if anyone knows how to force SOLIDWORKS to use an older installed version of Excel (2007 or 2010)? I currently have Office 2007 and Office 2016 installed, but SOLIDWORKS is defaulting to the newest version.

I'm not sure on that one, I don't do the actual installs. Did you ask your IT dept if it's an option during the SW Install?
Thanks Alice Caspari. I'm not aware of any option in the SOLIDWORKS installer, but so far Excel 2016 seems to be working (fingers still crossed). By the way, we are still running SOLIDWORKS version 2011 SP4.0, so Excel 2007 has been fine. Hopefully, as we move forward with a pending upgrade to 2015 SP3.0, things will continue to function normally, and we can go ahead with Excel 2016 as our sole install.
