As stated, it's a part into a part, not a part into an assembly. It seems I have to open the part I want to insert, change it to the configuration I want, and re-insert it all over again. I was hoping I could do it the way you do it an assembly...or something like it.
If I recall correctly, you can by clicking "List External References" and then there should be a drop down menu. If that doesn't do it, I'll try to find a part that has a part inserted and give you the exact way.

Glad I found this thread. The correct answer solved my issue.
One thing to add... the inserted part (the child) must be open to be able to view and change the linked configuration in the parent file. The drop down menu showing the different configurations is blank until the child part is open in context.

To change to a different configuration in a derived part, the parent part must be in memory.
...not to be confused with Edit in Context.
