With the file checked out, go to the 'Contains' tab for the file in Windows Explorer. The furthest right button (the one beside the button with the Excel icon) is the button that brings up the edit references dialog. You can remove the reference there.

Related to Paste as Reference and keeping things neat... It seems the Where Used tab of parts and assemblies can quickly get cluttered when using Paste As Reference for the EC process (EC Parent item (say a Word doc) with a bunch of pasted references). Especially if you look at "<<All Versions>>"
Do you guys generally use this method for EC? Do you Paste the slddrw, or do you paste the sldprt/sldasm? It seems to work with either, but pasting the model means Where Used doesn't show anything on the drawing, which might be okay. I'm just trying to develop a consistent practice to share with our users.
And do you ever remove references when you finish an EC?
