That is all you had to do was do what mike suggested. It looks like someone updated the template file names and didn't update those locations that mike suggested. Just click the 3 dots and select what is there.
Since you reset your settings, then you are now using the default templates that Solidworks originally came with. Therefore, you just undid everything that your IT guy set up for you.

As you get more familiar with the program you might want to select the "Prompt user to select document template" option at the bottom of the screenshot shown above. That way you can save custom templates (preferably not in the SW installation files), point to this location at Tools > Options > System Options > File Locations > Document Templates, and then select "Advanced" at the bottom left corner of the new document dialog box (which will allow you to select from saved custom templates).
Did you just recently update or move you template file locations - check Tools/Options/File Locations and make sure you have the files in the right folder and have the right folder selected here.........
