But, do you know if it's possible to control the rest of the dimensions of the Hole Wizard (bore depth, thread depth)?

You should be able to directly control those dimensions. I'll have to check if there are any special or different parameter for them.
For directly controlling keep the design table open and double click on those dimensions and you can see them added to the design table. Other way is to copy the dimension full name and add to design table cell.
I haven't tried Deepak's Method specifially, but I gather that you want to alter hole wizard taps?
In SW2014, I know Hole Wizard dimensions & names do not get populated by the design table wizard when you initially auto-create a table. But you can use them, you just have to manually insert them into the table. Just go into the Hole Wizard sketch, find/rename the specific dimensions, then just add them to the design table.
This way you can also control the C'sink/bores, drill flats/points, etc.
If you have all the HW profiles already set-up, then the method linked to by Deepak would be best, as you would just need one column field for the single hole specification. But if you want to custom control each dimension of the hole from the table, you can do that as well.
